Description

Strawberry Mochi is a delightful Japanese treat featuring sweet, chewy mochi dough wrapped around fresh, juicy strawberries. This easy-to-make recipe requires simple ingredients and uses the microwave to quickly prepare a soft and sticky mochi dough, which is then dusted with cornstarch and chilled for a refreshing dessert or snack.

Ingredients

Scale

For the Mochi Dough

  • 1 cup sweet rice flour (Mochiko)
  • 1/3 cup granulated sugar
  • 1/2 cup water

For the Filling and Coating

  • 8 fresh strawberries, hulled
  • 1/4 cup cornstarch (for dusting)

Instructions

  1. Prepare Ingredients: Gather all ingredients and rinse the hulled strawberries thoroughly under cold water to ensure they are clean and ready for use.
  2. Make the Mochi Dough: In a microwave-safe bowl, combine the sweet rice flour, granulated sugar, and water. Stir the mixture well until it becomes smooth and evenly combined.
  3. Cook the Dough: Microwave the mixture in 1-minute intervals, stirring gently between each interval, until the dough becomes sticky, slightly translucent, and fully cooked. This usually takes about 2 to 3 minutes total.
  4. Prepare the Work Surface: Dust your clean work surface generously with cornstarch to prevent sticking. Carefully remove the hot mochi dough from the microwave and place it on the prepared surface.
  5. Knead the Dough: Gently knead the hot mochi dough until it becomes smooth and pliable. Be cautious as the dough will be very hot at this stage.
  6. Divide and Fill: Divide the dough into 8 equal golf ball-sized pieces. Flatten each piece into a round disc shape, place one hulled strawberry in the center, and fold the dough around the strawberry to fully enclose it.
  7. Coat and Set: Roll each filled mochi ball in cornstarch to prevent sticking and place them on a plate or tray. Refrigerate the mochi for about 30 minutes to allow them to set and cool before serving.

Notes

  • Be careful when handling the hot mochi dough to avoid burns.
  • Ensure strawberries are completely dry before wrapping to prevent excess moisture from affecting the mochi texture.
  • Use fresh strawberries for the best flavor and texture.
  • You can substitute fresh strawberries with other fruits if desired.
  • Chill the mochi well before serving for the optimal chewy texture.
