  • 1 tbsp balsamic vinegar (optional, but adds depth)


Instructions

  1. Caramelize the onions: Heat the olive oil and butter in a pan over medium-low heat. Add the sliced onions along with salt and sugar, then cook slowly for 20 to 30 minutes, stirring occasionally until the onions become deep golden and jammy in texture. Stir in the balsamic vinegar at the end and let the mixture cool slightly.
  2. Prepare the pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface and cut it into squares or rectangles of your desired size. Lightly score a border about ½ inch around each piece without cutting all the way through to help the edges puff up during baking.
  3. Assemble: Spoon a generous amount of the caramelized onions inside the scored border of each pastry piece. Top the onions with crumbled goat cheese and sprinkle fresh or dried thyme leaves over the top.
  4. Egg wash: Beat the egg and brush it carefully onto the edges of the pastry squares to ensure a golden and attractive finish after baking.
  5. Bake: Place the assembled tarts on a baking sheet and bake in the preheated oven for 15 to 20 minutes, or until the pastry is puffed up and golden brown.
