  1. Soak the Dates: Place all of the dates in a medium bowl and cover them with boiling water. Allow the dates to soak for approximately 30 minutes until they soften.
  2. Prepare for Blending: Once the soaking water is cool enough to handle, remove the pits from the dates. Transfer the pitted dates into a high-speed blender or food processor.
  3. Blend Ingredients: Add the non-dairy milk, sea salt, and vanilla extract to the blender. Blend everything together until the mixture is smooth and creamy. Periodically turn off the blender and scrape down the sides with a spatula. This process can take up to 10 minutes depending on your blender’s power to achieve the perfect caramel-like consistency.
  4. Store the Caramel: Once smooth, transfer the date caramel to an airtight container. Store it in the refrigerator for up to 2 weeks.
  5. Freeze for Longer Storage: For extended shelf life, freeze the date caramel in an airtight container or ice cube tray for individual portions. When needed, defrost in the refrigerator overnight and whisk well before serving.
