- 2 tablespoons butter, softened
Egg Mixture
- 2 large eggs
- 1 tablespoon milk or cream

- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese (or any cheese that melts well)
- 2 slices cooked bacon, crumbled (optional)

- 1 tablespoon olive oil
- Optional: A sprinkle of everything bagel seasoning
Instructions
- Prepare the Egg Mixture: In a small bowl, crack the eggs. Add milk or cream, salt, and pepper. Whisk until fully combined and slightly frothy to create a smooth coating for the bread.
- Assemble the Grilled Cheese: Spread softened butter on one side of each bread slice. Then flip two slices over onto the unbuttered side. Layer half the cheddar cheese, then half the Monterey Jack cheese, and half the crumbled bacon (if using) evenly on these slices. Top with remaining cheese and cover with the other slices of bread, butter-side up.
- Cook the Egg-Soaked Grilled Cheese: Heat olive oil in a large non-stick skillet over medium-low heat. Dip each assembled sandwich into the egg mixture, coating both sides thoroughly but allowing excess egg to drip off before placing it in the skillet.
- Cook the Sandwich: Cook for 3 to 5 minutes on one side, pressing gently with a spatula until golden brown and cheese starts to melt. Flip carefully and cook for another 3 to 5 minutes until the other side is golden brown and the cheese is fully melted. Cover the skillet with a lid for one to two minutes to trap heat and help melt the cheese through.
