  • 1 green bell pepper, diced

  • 2 roma tomatoes, diced
  • 1 avocado, diced

Dressing

  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Drain and Rinse Beans and Peas: Thoroughly drain and rinse the black beans and black-eyed peas to remove excess liquid and reduce sodium content.
  2. Prepare Vegetables: Dice the red and green bell peppers, red onion, roma tomatoes, and avocado finely. Mince the jalapeño if using. Chop the fresh cilantro finely as well.
