- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely diced
- 1 jalapeño, minced (optional)
- 2 roma tomatoes, diced
- 1 avocado, diced
- 1/2 cup fresh cilantro, chopped
Dressing
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Drain and Rinse Beans and Peas: Thoroughly drain and rinse the black beans and black-eyed peas to remove excess liquid and reduce sodium content.
- Prepare Vegetables: Dice the red and green bell peppers, red onion, roma tomatoes, and avocado finely. Mince the jalapeño if using. Chop the fresh cilantro finely as well.
- Combine Ingredients: In a large bowl, add the black beans, black-eyed peas, corn kernels, diced bell peppers, red onion, tomatoes, and minced jalapeño. Toss gently to mix all ingredients evenly without mashing.
- Make Dressing: In a small bowl, whisk together fresh lime juice, olive oil, salt, and black pepper until well blended. Pour this dressing over the vegetable and bean mixture.
- Mix Dressing and Salad: Stir the mixture gently to coat all veggies and beans with the dressing fully.
- Add Avocado and Cilantro: Just before serving, gently fold in the diced avocado and chopped cilantro to maintain their texture and freshness.
