Description

This Taco Rice Bowl with Doritos is a quick and flavorful meal ready in just 25 minutes, combining seasoned ground beef, fluffy rice, fresh toppings, and a crunchy Doritos twist for a fun and satisfying Tex-Mex dinner.

Ingredients

Scale

Protein

  • 1 lb. ground beef

Seasoning

  • 1 packet taco seasoning (or homemade equivalent)

Base

  • 2 cups cooked rice (white, brown, or Mexican-style rice)

Toppings

  • 2 cups nacho cheese Doritos, crushed lightly
  • Shredded lettuce (about 1 to 1.5 cups)
  • Diced tomatoes (about 1 cup)
  • Shredded cheese (cheddar or Mexican blend, about 1 cup)
  • Sour cream (to taste, about ½ cup)
  • Salsa or pico de gallo (about ½ cup)
  • Sliced avocado or guacamole (about 1 medium avocado or ½ cup guacamole)
  • Black beans or corn kernels (about 1 cup)

Instructions

  1. Cook Ground Beef: Heat a skillet over medium heat and cook the ground beef, breaking it up with a spoon, until browned and no pink remains, about 7-8 minutes.
  2. Season the Beef: Drain any excess fat from the skillet, then stir in the taco seasoning and a splash of water (if suggested on seasoning packet), cooking for another 2-3 minutes until the beef is evenly coated and flavorful.
  3. Prepare Rice: Cook rice according to package instructions while the beef cooks, using preferred rice type such as white, brown, or Mexican-style rice to complement the dish.
  4. Assemble Bowls: Divide the cooked rice evenly among bowls, then top each with a generous layer of the seasoned beef.
  5. Add Fresh Toppings: Layer shredded lettuce, diced tomatoes, shredded cheese, black beans or corn, sliced avocado or guacamole, and dollops of sour cream and salsa or pico de gallo over the beef and rice.
  6. Top with Doritos: Finish by sprinkling crushed nacho cheese Doritos on top for a crunchy, cheesy texture contrast.
  7. Serve: Serve the taco rice bowls immediately while the beef is warm and Doritos stay crispy for best enjoyment.

Notes

  • Using Mexican-style rice adds extra flavor, but plain white or brown rice works well too.
  • Adjust the quantity of Doritos according to your desired crunchiness.
  • For a vegetarian version, substitute ground beef with seasoned black beans or cooked lentils.
  • Leftovers can be stored in an airtight container for up to 3 days; add crushed Doritos just before serving to keep them crisp.
  • Adding fresh lime juice or cilantro as additional toppings brightens the flavors.
