Strawberry Balsamic Jam

Grilled Cheese Sandwiches
- 8 slices of your favorite bread (Sourdough or brioche recommended)
- 4 tablespoons butter, softened
- 8 ounces Brie cheese, sliced (rind on or off, your preference)

Instructions
- Make the Strawberry Balsamic Jam: Combine strawberries, balsamic vinegar, sugar, lemon juice, and black pepper in a medium saucepan. Stir well to mix all ingredients.
- Simmer the Mixture: Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking.
- Cook Until Thickened: Reduce heat to low and continue cooking for 20-25 minutes, stirring frequently until the strawberries soften and the jam thickens to a consistency where a clear trail appears when a spoon is dragged through it.
- Optional Texture Adjustment: For a smoother jam, mash the mixture gently with a potato masher or use an immersion blender.
- Cool and Store the Jam: Remove the jam from heat and let it cool completely; it will thicken further. Store in an airtight container in the refrigerator for up to one week.
- Prepare the Bread: Butter one side of each slice of bread with the softened butter, ensuring even coverage.
- Assemble Sandwich Base: Place four slices of bread, butter-side down, on a clean surface to start assembly.
- Spread the Jam: Generously spread the cooled strawberry balsamic jam over the unbuttered side of the bread slices.
