Description

Instructions

  1. Marinate the Shrimp: In a large bowl, combine olive oil, honey, lime juice and zest, minced garlic, chili powder, red pepper flakes, kosher salt, and black pepper. Add the peeled and deveined shrimp to the marinade and toss well to coat. Cover and refrigerate for 1 hour to allow the flavors to infuse the shrimp.
  2. Cook the Shrimp: Heat a nonstick skillet over medium-high heat. Add the shrimp along with half of the marinade to the skillet, discarding the rest of the marinade to avoid contamination. Cook the shrimp for 2 to 3 minutes on each side, or until they turn pink and curl up, being careful not to overcook them. Remove the shrimp from the heat and let them rest briefly.
  3. Assemble the Taco Bites: On each scoop-style tortilla chip, place about 1 teaspoon of sour cream and 1 teaspoon of diced or mashed avocado. Top each with one cooked shrimp. Add a small spoonful of salsa or Pico de Gallo on top. Garnish with fresh cilantro leaves or a squeeze of lime juice if desired.
