  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and prepare a large sheet pan by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Prepare Sausage: Slice the Italian sausage links into 1- to 2-inch pieces or leave them whole depending on your preference. Arrange the sausage pieces on the prepared sheet pan.
  3. Add Vegetables and Season: Place the sliced bell peppers and red onion on the sheet pan with the sausage. Drizzle everything with olive oil and sprinkle Italian seasoning, garlic powder, salt, and black pepper evenly over the ingredients. Toss directly on the pan to coat all items well with the oil and seasonings.
  4. Spread in Single Layer: Spread the sausage and vegetables out evenly in a single layer on the sheet pan, making sure not to overcrowd to allow proper roasting.
  5. Roast: Roast in the preheated oven for 25–30 minutes, flipping the sausage and vegetables halfway through cooking for even browning. The sausage should be cooked through and the vegetables tender with slight caramelization.
  6. Add Balsamic Vinegar: If using, drizzle balsamic vinegar over the ingredients during the last 5 minutes of roasting to enhance flavor.
  7. Garnish and Serve: Remove from the oven and sprinkle with chopped parsley if desired. Serve hot over rice, pasta, or in hoagie rolls for a hearty meal.
