For the Filling

  • 2 tbsp vegetable oil
  • 1 large onion, thinly sliced
  • 4 oz baby bella mushrooms, sliced
  • 2 tbsp unsalted butter
  • 1 ½ Granny Smith apples, cubed
  • 1 tsp granulated sugar
  • 1 ½ oz grated Gruyère cheese
  • 2 tbsp minced chives
  • ½ tsp dried thyme

For the Pastry

  • 1 lb puff pastry, thawed
  • 1 egg, beaten (for egg wash)


Instructions

  1. Caramelize the Onions: Heat the vegetable oil in a skillet over medium-low heat. Add the thinly sliced onion and cook slowly for 20-30 minutes, stirring occasionally, until the onions are tender and golden brown. Once caramelized, remove from the heat and set aside.
  2. Sauté Mushrooms and Apples: Using the same skillet, melt the unsalted butter over medium heat. Add the sliced mushrooms and cook for 5-7 minutes until they are browned and most of the moisture has evaporated. Then add the cubed Granny Smith apples and granulated sugar, cooking for another 5-8 minutes until the apples are tender but still hold their shape. Remove from heat and combine with the caramelized onions in a mixing bowl.
  3. Assemble the Filling: To the bowl containing the onions, mushrooms, and apples, add the grated Gruyère cheese, minced chives, and dried thyme. Gently fold the ingredients until evenly combined.
  4. Prepare Puff Pastry: Lightly flour a work surface and unroll the thawed puff pastry. Cut it into approximately 2-inch squares or rectangles. Place about one tablespoon of the filling mixture onto the center of each pastry square, keeping a clear border around the edges.
  5. Shape and Bake: Bring the edges of each pastry square up and pinch them together at the center to create a neat parcel. Arrange the parcels on a baking sheet lined with parchment paper. Preheat your oven to 400°F (200°C). Brush the pastries with the beaten egg to give a golden and glossy finish.
