- Preheat Oven: Heat your oven to 350°F. Line a baking sheet with a silicone baking mat or parchment paper to prevent sticking and make cleanup easier.
- Butter Pretzels: Lightly brush each mini pretzel with the melted unsalted butter, coating all sides evenly. This step helps maintain their crunch while baking.
- Add Rolos and Bake: Place one unwrapped Rolo on top of each buttered pretzel, spacing them evenly on the baking sheet. Bake for 3½ to 4 minutes until the Rolos soften but do not spread beyond the pretzel edges. Monitor carefully during the last minute.
- Top with M&Ms: Immediately after removing from the oven, gently press one M&M onto each softened Rolo to help it stick without melting.
- Add Pecans and Salt: Sprinkle the chopped toasted pecans over the warm bites and lightly press to adhere. Then add a small pinch of coarse sea salt to balance the sweetness and enhance flavor.
- Chill: Refrigerate the pretzel bites on the baking sheet for 15 minutes to firm up the chocolate and maintain crunch.
- Melt White Chocolate: While chilling, melt white chocolate chips in 20-second bursts in the microwave, stirring until smooth.
- Drizzle White Chocolate: Drizzle the melted white chocolate over the chilled pretzel Rolo M&M bites using a spoon or piping bag. Let the drizzle set at room temperature or refrigerate for 5-10 minutes before serving.
