Description

These Mini Pepper Pizzas are an easy, fun, and delicious appetizer or snack made with sweet mini peppers topped with pizza sauce, gooey mozzarella cheese, and mini pepperoni slices, baked to bubbly perfection. Perfect for parties, kids, or a quick cheesy treat.

Ingredients

Scale

For 24 Mini Pizzas

  • 12 mini sweet peppers, washed and dried
  • 1 cup pizza sauce (about 1 tablespoon per mini pepper half)
  • 1¼ cups shredded mozzarella cheese, freshly shredded for best melting
  • 74 mini pepperoni slices (about 2 to 3 per pepper half)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prepare Peppers: Slice each mini sweet pepper in half lengthwise and carefully remove all seeds and membranes to create little pepper “boats.”
  3. Arrange Peppers: Place the pepper halves cut-side up on the lined baking sheet, evenly spaced.
  4. Add Sauce: Spoon approximately 1 tablespoon of pizza sauce into each pepper half, spreading evenly but leaving some edge.
  5. Add Cheese: Generously sprinkle shredded mozzarella cheese evenly over each pepper half, covering the sauce.
  6. Top with Pepperoni: Place 2 to 3 mini pepperoni slices on top of the cheese in each pepper half, adjusting quantity based on size.
  7. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted, bubbly, and slightly golden brown.
  8. Cool Slightly: Remove from oven and allow the mini pepper pizzas to cool for a few minutes to set before serving.
  9. Serve: Serve the mini pepper pizzas warm as a delightful appetizer or snack.

Notes

  • Use freshly shredded mozzarella for best melting and texture.
  • Adjust pepperoni amount to taste or substitute with vegetarian pepperoni for a vegetarian option.
  • Make sure to remove all seeds and membranes from peppers to avoid bitterness.
  • These mini pizzas can be prepared ahead and baked fresh before serving.
  • Serve with extra pizza sauce or marinara for dipping if desired.
