Description

Louisiana Dirty Rice is a flavorful, hearty dish originating from Cajun cuisine, combining seasoned ground meat, chicken livers, and the ‘Holy Trinity’ of bell peppers, celery, and onions with fluffy white rice for a deliciously savory meal perfect for family dinners.

Ingredients

Scale

Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth

Meat & Protein

  • 1/2 lb ground pork or ground beef
  • 1/4 lb chicken livers (optional)

Vegetables

  • 1/2 cup diced bell peppers
  • 1/2 cup diced celery
  • 1/2 cup diced onions
  • 2 tablespoons chopped green onions (for garnish)

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Cook Rice: Rinse the long-grain white rice until the water runs clear, then cook it in chicken broth over medium heat until fluffy and liquid is absorbed, about 18-20 minutes. Set aside.
  2. Brown Meat and Chicken Livers: In a large skillet over medium-high heat, brown the ground pork or beef along with the chicken livers (if using) until cooked through and nicely caramelized, breaking up any chunks with a spoon. Drain excess fat if necessary.
  3. Sauté the Holy Trinity: Add diced bell peppers, celery, and onions to the skillet with the browned meat and livers. Sauté the mixture until the vegetables are tender and fragrant, about 5-7 minutes.
  4. Mix in Seasonings and Rice: Sprinkle garlic powder, paprika, Cajun seasoning, salt, and pepper over the meat and vegetable mixture. Stir well to combine. Then fold in the cooked rice thoroughly so all ingredients are evenly mixed.
  5. Simmer and Serve: Lower the heat and let the mixture simmer gently for about 5 minutes to allow flavors to meld together. Garnish with chopped green onions before serving warm.

Notes

  • Chicken livers are optional but add authentic flavor and richness to the dish.
  • Adjust Cajun seasoning to taste for desired spice level.
  • For a healthier option, use lean ground turkey or skip chicken livers.
  • Serve with a side of steamed vegetables or a fresh green salad for a complete meal.
