Description

This delicious Loaded Breakfast Hash combines crispy golden potatoes, sautéed bell peppers and onions, savory breakfast sausage, and perfectly fried eggs for a hearty, flavorful morning meal. It’s a simple skillet dish packed with textures and spices like smoked paprika, making it an ideal crowd-pleaser for breakfast or brunch.

Ingredients

Scale

Vegetables

  • 3 medium russet potatoes, diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced

Proteins

  • 1/2 pound ground breakfast sausage
  • 4 large eggs

Other Ingredients

  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook potatoes: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced potatoes and cook undisturbed for 5 minutes to get them crispy, then stir occasionally for an additional 10 minutes until the potatoes are golden and tender. Transfer the cooked potatoes to a plate.
  2. Cook sausage: In the same skillet, add the ground breakfast sausage and cook over medium heat until browned and cooked through, about 5–7 minutes. Remove sausage from the skillet and set aside.
  3. Sauté vegetables and seasonings: Add the remaining olive oil to the skillet. Sauté the sliced onion and bell peppers over medium heat until soft and slightly caramelized, approximately 6–8 minutes. Add minced garlic, salt, black pepper, and smoked paprika, cooking for 1 more minute to blend the flavors.
  4. Combine hash ingredients: Return the cooked potatoes and sausage to the skillet with the vegetables. Stir well to combine all ingredients and cook for 2–3 minutes to meld the flavors together.
  5. Fry eggs: In a separate nonstick pan, fry the eggs to your liking. Sunny-side up or over-easy are recommended for a runny yolk that complements the hash.
  6. Serve: Top the prepared breakfast hash with the fried eggs. Garnish with chopped fresh parsley and serve hot for a satisfying breakfast.

Notes

  • Russet potatoes work best for a crispy texture, but Yukon gold can be substituted for a creamier bite.
  • Feel free to add other vegetables like mushrooms or spinach for extra nutrition and flavor.
  • Use turkey sausage for a leaner option if desired.
  • Adjust the seasoning to taste, adding more smoked paprika or hot sauce for a spicy kick.
  • Cook eggs according to preference; scrambled eggs also pair well with this hash.
