- 2 cups chopped carrots (peeled)
- 2 cups chopped celery stalks
- 1 medium yellow onion, diced
- 3-4 cloves garlic, minced (depending on size)
- 1/2 tsp dried parsley
- 1/2 tsp dried thyme
- 1/2 tsp dried dill weed
Liquids & Seasonings
- 2 Tbsp olive oil
- 3 cups vegetable broth
- 1/2 a lemon, juiced
- Salt + pepper, to taste
Instructions
- Heat olive oil: In a large pot or dutch oven, add olive oil and heat over medium.
- Sauté onions and garlic: Add diced onion and minced garlic to the pot. Stir and cook for about 3 minutes, until fragrant and translucent.
- Add vegetables and herbs: Add chopped carrots, celery, and dried herbs. Season with salt and pepper. Cook, stirring frequently, for 5 minutes to slightly soften the vegetables.
- Add broth and lemon juice, simmer: Stir in vegetable broth and lemon juice. Cover and bring broth to a boil. Reduce heat and allow veggies to simmer (covered) for about 8-10 minutes, or until tender.
- Blend the soup: Using a handheld immersion blender, blend the soup directly in the pot until smooth. Alternatively, transfer all the ingredients to a high-speed blender and blend until creamy and smooth. Adjust seasonings to taste.
- Serve warm: Pour into bowls and serve hot, optionally garnished with fresh herbs or a squeeze of lemon for brightness.
Notes
- For a thinner soup, add additional vegetable broth or water when blending.
- Adjust garlic amount based on your preference for pungency.
- This soup can be stored in an airtight container in the refrigerator for up to 4 days.
