  • 1 pound kielbasa sausage, sliced into 1/2-inch rounds

  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 cup broccoli florets

Seasonings and Garnish

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 cup chicken broth or water

Instructions

  1. Brown Kielbasa: Heat olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook for 4 to 5 minutes until lightly browned. Remove the sausage from the skillet and set aside.
  2. Sauté Onion and Garlic: In the same skillet, add the sliced onion and minced garlic. Sauté for 2 to 3 minutes until fragrant and the onions start to soften.
  3. Cook Vegetables: Add the sliced red and yellow bell peppers, zucchini, and broccoli florets to the skillet. Cook for 5 to 7 minutes until the vegetables are tender-crisp, stirring occasionally.
  4. Season: Sprinkle in the smoked paprika, dried thyme, salt, and black pepper. Stir well to combine and coat the vegetables evenly with the spices.
  5. Combine and Simmer: Return the browned kielbasa to the skillet. Pour in the chicken broth or water. Cook for an additional 2 to 3 minutes, allowing the flavors to meld and the liquid to reduce slightly.
  6. Garnish and Serve: Remove from heat and sprinkle fresh chopped parsley on top. Serve the skillet hot on its own or alongside rice or crusty bread for a complete meal.
