Cheese Wraps
- 8 slices Swiss cheese
Filling
- 8 ounces sliced corned beef or pastrami
- 1 cup sauerkraut, drained and squeezed very dry

- 1/2 cup mayonnaise
- 2 tablespoons sugar-free ketchup
- 1 tablespoon sugar-free dill pickle relish
- 1 teaspoon minced onion
- 1/4 teaspoon paprika
- 1 teaspoon Worcestershire sauce (optional)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Make the Keto Dressing: In a small bowl, whisk together mayonnaise, sugar-free ketchup, dill pickle relish, minced onion, paprika, and Worcestershire sauce (if using) until smooth. Set aside for flavors to meld.
- Bake the Cheese Slices: Arrange Swiss cheese slices spaced apart on the lined baking sheet. Bake in the preheated oven for 6 to 8 minutes until cheese melts, bubbles and edges begin to brown slightly, creating flexible, crisp wraps.
- Assemble Roll-Ups: Remove cheese from oven and allow to cool for 30 to 60 seconds so they become pliable but not runny. Spread a thin layer of keto dressing on each melted cheese slice, then top with corned beef and a small pinch of very dry sauerkraut.
- Roll and Set: Carefully roll each cheese slice tightly around the filling with the seam side down. Let the roll-ups rest a few minutes to crisp up and hold their shape.
