Description

This Healthy Spinach Artichoke Dip is a delicious, nutritious twist on the classic appetizer. Packed with artichoke hearts, spinach, Parmesan cheese, and Greek yogurt, it’s a creamy, flavorful dip that’s perfect served warm or cold. Ideal for a quick snack or party starter, this recipe offers a wholesome option without sacrificing taste.

Ingredients

Scale

Dip Ingredients

  • 1 can artichoke hearts (14 oz)
  • 1 cup frozen spinach or kale (60g), can be omitted
  • 2/3 cup Parmesan cheese or nutritional yeast (60g)
  • 1/2 cup Greek yogurt or dairy free alternative (120g)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Instructions

  1. Preheat the Oven: If you choose to bake the dip, preheat your oven to 350° Fahrenheit (177° Celsius) to prepare for cooking.
  2. Prepare Vegetables: Drain the artichoke hearts thoroughly but do not rinse. Squeeze out excess moisture from the frozen spinach and roughly chop both the artichokes and spinach to create a uniform texture.
  3. Combine Ingredients: Place the chopped artichokes and spinach into a heat-safe bowl. Add Parmesan cheese, Greek yogurt, salt, and garlic powder. Stir all ingredients together until well combined into a creamy mixture.
  4. Serve Cold or Bake: You can enjoy the dip immediately as a cold dish. Alternatively, bake it in the center rack of the oven for 20 minutes until hot, bubbling, and lightly browned on top. Another heating option is to microwave it for 5 minutes, stirring halfway through to ensure even heating.
  5. Serve: Serve the healthy appetizer warm alongside toasted baguette slices, tortilla chips, or a variety of raw vegetables for dipping.
  6. Store Leftovers: Refrigerate any leftovers in an airtight container. Consume within five days to maintain freshness and quality.

Notes

  • The spinach can be substituted with kale or omitted if preferred.
  • For a vegan version, use nutritional yeast instead of Parmesan cheese and a dairy-free yogurt alternative.
  • Adjust salt and garlic powder according to taste.
  • The dip can be enjoyed hot or cold, depending on your preference.
  • Serving suggestions include toasted baguette, tortilla chips, or raw vegetables.
