Description

Salad Ingredients

  • Spring salad mix, or any salad mix you prefer – 4 cups
  • Handful grape or cherry tomatoes, halved – 1 cup
  • 1 shallot, thinly sliced
  • Microgreens (optional) – 1/4 cup
  • 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
  • Mineral salt & pepper, to taste

Lemon Tahini Dressing

  • 4 tablespoons tahini
  • Juice of one large lemon (approximately 3 tablespoons)
  • Dash of mineral salt
  • Dash of garlic salt
  • Dash of red pepper flakes
  • 2 – 3 tablespoons water or lemon juice, as needed to thin


Instructions

  1. Prepare the Tahini Dressing. In a small bowl, whisk together tahini, lemon juice, mineral salt, garlic salt, and red pepper flakes until well combined. The mixture will be thick initially.
  2. Adjust Dressing Consistency. Gradually add 2 to 3 tablespoons of water or lemon juice to the dressing, whisking continuously until the desired creamy but pourable consistency is reached. Taste and adjust seasoning as needed.
  3. Assemble the Salad. In a large serving bowl or plate, arrange the spring salad mix, halved cherry tomatoes, thinly sliced shallots, microgreens if using, and half of the drained chickpeas. Season lightly with mineral salt and pepper.
  4. Add Dressing and Chickpeas. Drizzle the prepared lemon tahini dressing over the salad. Top with the remaining chickpeas and give a gentle toss to combine everything just before serving.

Notes

  • You can substitute lemon juice with apple cider vinegar for a different tangy flavor.
  • Microgreens are optional but add a fresh, slightly peppery taste and texture.
  • For a nuttier dressing, lightly toast the tahini before mixing.
  • This salad is best served fresh to maintain the crispness of the greens.
  • Leftover dressing can be stored in the refrigerator for up to 3 days.
