Instructions

  1. Prepare the cheese base: Add the feta cheese, cream cheese, lemon juice, 3 tablespoons olive oil, basil, oregano, red pepper flakes, salt, and pepper into a food processor or mixing bowl. Blend or mix thoroughly until the mixture is completely smooth, creamy, and fluffy, scraping down the sides as needed to ensure an even texture suitable for spreading.
  2. Make the vegetable topping: In a separate bowl, combine the halved grape tomatoes, sliced cucumbers, diced red onion, and Kalamata olives if using. Toss these vegetables with 1 to 2 tablespoons of olive oil, 1 teaspoon salt, and a pinch of pepper until they are evenly coated. Taste and adjust the seasoning if necessary to balance the flavors.
