Ingredients
Scale
Cheese
- 4 oz Gouda cheese, sliced or shredded
Vegetables
- 1 cup cremini or button mushrooms, cleaned and sliced (or shiitake or portobello)
- 1 medium sweet onion (Vidalia, yellow, or red), sliced
Bread
- 4 slices hearty sourdough or whole-grain bread (or gluten-free bread)
Fats & Oils
- 2 tablespoons unsalted butter (or olive oil or vegan butter), softened for spreading
- 1 tablespoon olive oil for roasting
Seasonings
- ½ teaspoon salt, divided
- ¼ teaspoon freshly ground black pepper, divided
- ¼ teaspoon garlic powder (optional)
- 1 teaspoon fresh thyme or rosemary, chopped (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables.
- Prepare Vegetables: Clean and slice the mushrooms and onions. In a bowl, toss them with olive oil, half the salt and pepper, garlic powder if using, and chopped thyme or rosemary if desired. Spread them evenly on a baking sheet.
- Roast Vegetables: Place the baking sheet in the oven and roast for about 20 minutes until mushrooms are golden and onions caramelized, stirring halfway through to ensure even cooking.
- Assemble Sandwich: Butter one side of each bread slice. On the unbuttered side, layer a generous amount of Gouda cheese, followed by the roasted mushrooms and onions, then another layer of Gouda cheese. Top with the second slice of bread, buttered side facing out.
- Grill Sandwich: Heat a skillet over medium heat. Place the sandwich in the skillet and cook for 4-5 minutes per side, or until the bread is golden brown and cheese melted. Covering the skillet helps melt the cheese evenly.
- Serve: Remove the sandwich from the skillet and let it cool briefly. Slice in half and serve warm, optionally paired with tomato soup or a simple salad.
Notes
- You can substitute vegan cheese and butter to make this vegan-friendly.
- Use gluten-free bread to accommodate gluten-free diets.
- Adding fresh herbs like thyme or rosemary enhances the flavor but is optional.
- Covering the skillet while grilling helps the cheese melt better.
- Adjust seasoning to taste, especially salt and pepper for the roasted vegetables.
