Ingredients
Scale
Eggs
- 2 pieces fresh eggs, room temperature
- Salt to taste, freshly cracked preferred
- Black pepper to taste, freshly cracked preferred
- 2 tbsp neutral oil for frying
Spicy Mayo Sauce
- 1 tbsp mayo
- 1 tsp sriracha
- 1 tbsp garlic spread
- 1 tsp dijon mustard
Additional
- 1 slice cheese
Instructions
- Heat Oil: Heat 2 tablespoons of neutral oil in a pan over medium heat for about 2 minutes until the oil shimmers, indicating it’s hot enough for frying.
- Fry Eggs: Crack the eggs into the pan, season them with freshly cracked salt and black pepper. Cook the eggs for 2 minutes on the first side, then carefully flip and cook for an additional 15 seconds to achieve crispy edges.
- Set Yolks: Turn off the heat and let the eggs sit in the pan for 1 minute. This step allows the yolks to set slightly without fully hardening, maintaining a creamy texture.
- Prepare and Mix: Cut the fried eggs into pieces. In a separate bowl, mix together mayo, sriracha, garlic spread, and dijon mustard. Combine the chopped eggs with this spicy mayo mixture and mix gently for about 5 minutes to evenly coat and blend flavors.
Notes
- Use room temperature eggs to ensure even cooking.
- Adjust the amount of sriracha depending on your spice preference.
- Use freshly cracked pepper and salt for the best flavor.
- Serve immediately for best taste and texture.
- Neutral oil such as canola or vegetable oil is recommended for frying to avoid overpowering flavors.
