Description

Doritos Taco Salad is a quick and flavorful Tex-Mex inspired dish featuring seasoned ground beef, crisp romaine lettuce, black beans, fresh tomatoes, cheddar cheese, and crunchy nacho cheese Doritos. Tossed with your choice of salad dressing, this colorful and satisfying salad combines vibrant textures and bold flavors for a perfect weeknight meal or potluck favorite in just 20 minutes.

Ingredients

Scale

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Salad Base

  • 3 to 4 Romaine lettuce hearts, rinsed then chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped OR 1 cup sliced cherry tomatoes
  • 1/2 cup shredded cheddar cheese

Toppings and Dressing

  • 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
  • 1 cup Catalina dressing OR your favorite salad dressing (ranch dressing recommended)
  • Fresh cilantro (optional)

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, brown and crumble the ground beef. Once fully cooked, drain the excess grease to reduce fat content.
  2. Season the Meat: Add the taco seasoning packet and the amount of water specified on the packet to the skillet. Stir everything together and bring the mixture to a boil, then reduce heat to low and simmer for 10 minutes to allow the flavors to meld. Remove from heat and let the meat cool slightly.
  3. Prepare the Salad Base: In a large salad bowl, combine chopped romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese.
  4. Add Ground Beef: Once the seasoned ground beef has cooled slightly, add it to the salad mixture and gently toss everything together until well combined. You can serve immediately or chill in the refrigerator until ready to eat. Do not add the Doritos chips yet to maintain their crunch.
  5. Finish and Serve: Just before serving, add the broken Doritos to the salad and drizzle with Catalina dressing or your preferred salad dressing. Toss gently to coat all ingredients evenly. Garnish with fresh cilantro if desired and enjoy your crunchy, flavorful taco salad!

Notes

  • For a healthier option, you can substitute ground turkey or chicken instead of beef.
  • To keep the chips crunchy, always add the Doritos just before serving.
  • Feel free to customize with additional toppings like sliced avocado, jalapeños, or sour cream.
  • Rinsing canned black beans helps reduce sodium content and improves flavor.
  • If you prefer a spicier salad, add a dash of hot sauce or chopped fresh chili peppers.
