Instructions

  2. Sear the Salmon: In a large ovenproof skillet, heat the olive oil over medium-high heat. Place the salmon fillets skin side up and sear each side for 2-3 minutes until golden brown. Remove the salmon from the skillet and set aside to keep warm.
  3. Sauté Aromatics: Using the same skillet, add the finely chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent and fragrant, releasing its sweetness.
  4. Add Mushrooms: Add the sliced mushrooms to the skillet and cook for 3-4 minutes until they soften and release their moisture, blending beautifully with the aromatics.
  5. Create the Sauce: Pour in the heavy cream and chicken broth, stirring to combine all ingredients. Allow the sauce to simmer gently for about 5 minutes until it thickens slightly and becomes creamy.
  6. Enhance Flavor: Stir in the grated Parmesan cheese, ground nutmeg, and lemon juice to the sauce. Add the fresh spinach and cook for an additional 2 minutes until the spinach wilts and incorporates smoothly into the sauce.
