Description

This Easy Creamy Ramen recipe combines rich, savory flavors with a smooth, comforting broth, making it the perfect cozy meal for any day. Featuring tender beef, garlic, ginger, and a creamy broth enhanced with cream cheese and miso paste, this dish comes together quickly using instant ramen noodles for a satisfying and flavorful comfort food experience.

Ingredients

Scale

Main Ingredients

  • 2 packets of instant ramen noodles
  • 2 cups water or low-sodium chicken or vegetable broth
  • 1 cup whole milk (or oat milk, soy milk, or almond milk)
  • 4 oz cream cheese (full-fat or reduced-fat)
  • 1 tablespoon freshly minced garlic (about 3 cloves)
  • 1 teaspoon grated ginger
  • 8 oz ground beef (or thinly sliced beef, cooked shredded chicken, or firm tofu)
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon white (shiro) miso paste
  • 1 tablespoon unsalted butter

Optional Toppings

  • 4 soft-boiled eggs
  • 2 scallions, thinly sliced (green onions)
  • 1/4 cup fresh spinach or corn
  • 1 teaspoon chili oil or chili crisp
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Prepare Your Aromatics and Beef: Mince the garlic and grate the ginger. Break ground beef into small pieces if using, or have thinly sliced beef ready.
  2. Cook the Beef: In a medium pot or deep skillet, melt half a tablespoon of butter over medium-high heat. Add ground beef and cook until browned and fully cooked through. If using thinly sliced beef, sear quickly on each side and set aside.
  3. Sauté the Aromatics: Reduce heat to medium, add remaining butter, then toss in minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant but not browned.
  4. Build the Creamy Broth: Pour in the chosen liquid base (water or broth) and bring to a gentle simmer. Whisk in cream cheese until melted and smooth. Stir in milk, ramen seasoning packets from the noodle package, soy sauce, and whisk in miso paste. Taste and adjust seasoning as needed.
  5. Cook the Noodles: Add ramen noodles to simmering broth and cook according to package directions, usually 2-3 minutes for instant noodles.
  6. Assemble and Serve: Divide noodles and broth evenly into serving bowls. If using thinly sliced beef, add it back to the bowls at this stage.
  7. Add Your Favorite Toppings: Garnish with soft-boiled eggs, sliced scallions, spinach or corn, chili oil or chili crisp, and toasted sesame seeds. Serve immediately for best flavor and texture.

Notes

  • You can substitute beef with cooked shredded chicken, tofu, or any protein of your choice.
  • Use low-sodium soy sauce and broth to control the salt level in the dish.
  • Adjust the amount of cream cheese for creaminess intensity.
  • Soft-boiled eggs add a rich, velvety texture to the ramen.
  • Feel free to add vegetables like bok choy, mushrooms, or carrots for extra nutrition.
  • Chili oil or chili crisp adds a spicy kick but is optional depending on your heat preference.
