- Combine Wet Ingredients: In a large mixing bowl or the bowl of a stand mixer, whisk together the warm water, melted butter, milk, honey, blended cottage cheese, and egg until the mixture is smooth and well combined.
- Add Dry Ingredients: Sprinkle in the instant yeast, 4¼ cups of the flour, and the salt. Mix with a dough hook attachment or a wooden spoon until a soft dough forms. Gradually add more flour as needed until the dough feels smooth, elastic, and slightly tacky but not sticky.
- Knead the Dough: Knead the dough either by hand or using the mixer for 8–10 minutes until it becomes soft and springy. Cover the bowl and let the dough rise in a warm spot until it doubles in size, approximately 60–75 minutes.
- Shape Rolls: Punch down the dough to release air. Divide it into 12 equal portions and roll each piece into a ball. Arrange the dough balls in a greased 9×13-inch baking dish, leaving a little space between them. Cover and allow the rolls to rise again until they become puffy and nearly doubled, about 25–35 minutes.
- Bake the Rolls: Preheat the oven to 375°F (190°C). Bake the rolls for 15–18 minutes, or until the tops turn lightly golden brown and the rolls are cooked through.
- Finish and Serve: Remove the rolls from the oven and brush them generously with melted butter while still warm. Optionally, sprinkle with flaky salt for added flavor. Serve the rolls warm and enjoy!
