Scale
Main Ingredients
- 1 ripe banana, mashed
- 1/2 cup cottage cheese (full-fat or low-fat)
- 1/2 cup rolled oats (or oat flour)
- 2 large eggs
- 1 scoop vanilla protein powder (optional, adds extra protein)
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of salt
Optional Mix-Ins
- Chocolate chips
- Blueberries
- Chopped nuts
- Chia seeds
- Flaxseeds
- Shredded coconut
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with silicone liners to prevent sticking.
- Prepare the Batter: In a mixing bowl, mash the banana until smooth. Add the cottage cheese, eggs, and vanilla extract, mixing until well combined. Stir in the rolled oats, protein powder, baking powder, cinnamon, and salt. Mix until you have a thick, slightly lumpy batter. Fold in any optional mix-ins like chocolate chips or blueberries if desired.
- Fill the Muffin Tin: Spoon the batter into the mini muffin tin, filling each cup about 3/4 full to allow room for rising.
- Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the pancake bites to cool for a few minutes before removing them from the tin. Serve warm, or store in an airtight container in the refrigerator for up to 5 days. These bites can also be frozen for longer storage.
Notes
- Make it sweeter naturally by adding a drizzle of honey or maple syrup when serving.
- For extra protein, swap the cottage cheese for Greek yogurt or increase the amount of protein powder.
- If you prefer a smoother texture, pulse the rolled oats in a blender to make oat flour before mixing.
- Boost nutrition further by adding chia seeds, flaxseeds, or shredded coconut to the batter.
- These pancake bites are great as a quick breakfast, snack, or post-workout treat.
- Store leftovers in an airtight container in the fridge for up to 5 days or freeze for longer preservation.
