  • 1/4 teaspoon black pepper
  • 1/2 cup ranch dressing
  • 1 tablespoon chipotle in adobo sauce (or chipotle powder)
  • 1 tablespoon lime juice

Burrito Fillings

  • 1 cup cooked rice (white, brown, or cilantro-lime rice)
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced red onion
  • 4 large flour tortillas
  • Fresh cilantro (optional)


Instructions

  1. Marinate the Chicken: In a small bowl, whisk together olive oil, chipotle seasoning, salt, black pepper, ranch dressing, chipotle in adobo sauce, and lime juice until well combined. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal and refrigerate for at least 30 minutes or up to 4 hours to let the flavors meld.
  2. Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Remove chicken from marinade and grill for 5–7 minutes on each side until fully cooked and internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes. Slice the chicken thinly.
  3. Prepare the Burrito Ingredients: While the chicken is grilling, heat the cooked rice and black beans in a microwave or on the stovetop until warm. Chop the lettuce, tomatoes, and red onion to prepare fresh toppings.
  4. Assemble the Burritos: Lay out the flour tortillas on a clean flat surface. Layer each tortilla with a scoop of rice, followed by black beans, sliced grilled chicken, shredded cheddar cheese, shredded lettuce, diced tomatoes, sliced red onion, and fresh cilantro if using.
  5. Roll and Serve: Fold in the sides of the tortilla and tightly roll it up to enclose all the fillings. Slice the burrito in half diagonally and serve with extra ranch dressing or your favorite salsa on the side.
