Description

This Cheesy Spinach Artichoke & Mushroom Stuffed Baguette is a savory, crowd-pleasing appetizer perfect for gatherings or cozy nights in. Featuring a delicious combination of sautéed garlic, mushrooms, spinach, and artichokes blended with three cheeses—cream cheese, mozzarella, and Parmesan—this warm, bubbly stuffed baguette offers creamy, earthy flavors with a crispy bread exterior for the perfect bite.

Ingredients

Scale

For the Stuffed Baguette

  • 1 large baguette
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1 cup mushrooms, diced
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffed baguette.
  2. Sauté garlic: Heat olive oil in a skillet over medium heat, then add minced garlic and cook until fragrant, about 1 minute, to build the base flavor.
  3. Cook vegetables: Add the diced mushrooms to the skillet and cook until softened and tender. Stir in the chopped spinach and artichoke hearts and cook just until the spinach wilts.
  4. Prepare cheese mixture: Transfer the sautéed vegetables to a bowl and mix in softened cream cheese, shredded mozzarella, and grated Parmesan cheese. Season the mixture with salt and pepper to taste and combine well.
  5. Prepare baguette: Slice the baguette lengthwise in half. Using a spoon, scoop out some of the bread from each half to create a cavity for the filling, making sure not to puncture the crust.
  6. Fill baguette: Evenly spread the cheesy vegetable mixture inside the hollowed-out baguette halves.
  7. Bake: Place the stuffed baguette halves on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the cheese has melted completely and is bubbly and golden.
  8. Serve: Remove from oven and allow to cool slightly. Slice into serving portions and serve warm for the best flavor and texture.

Notes

  • You can substitute fresh spinach with frozen spinach; just be sure to thaw and drain excess moisture before using.
  • For extra flavor, add a pinch of red pepper flakes or Italian seasoning to the cheese mixture.
  • This recipe can be made ahead and baked just before serving to save time.
  • Use a crusty baguette to ensure it holds the filling well and provides a nice crunch.
  • Leftovers can be refrigerated and reheated in an oven or toaster oven to retain crispness.
