  • ¼ tsp garlic powder
  • ¼ tsp black pepper

Instructions

  1. Prep: Preheat your oven to 400°F (200°C). Grease a mini muffin tin thoroughly or use silicone molds to prevent the bites from sticking during baking.
  2. Mix the Batter: In a large mixing bowl, combine the cold mashed potatoes, shredded cheddar cheese, grated Parmesan, eggs, milk, melted butter, chopped green onions if using, garlic powder, black pepper, and salt. Stir the mixture well until it is smooth and fully combined with no lumps.
  3. Fill the Pan: Spoon the prepared potato mixture evenly into the mini muffin cups, filling each one almost to the top. Gently smooth the tops with the back of your spoon or a small spatula for an even surface.
  4. Bake: Place the muffin tin in the oven and bake for 18–22 minutes until the bites are puffed and golden brown on top. For an extra golden and crispy finish, you may broil them for 1–2 minutes at the end, but watch closely to avoid burning.
  5. Cool & Serve: Allow the puff bites to cool in the pan for about 5 minutes before removing them. Serve warm to enjoy the best texture with a crispy exterior and cheesy interior.
