Mashed Potato Filling

  • 2 cups mashed potatoes (preferably cold, leftovers work great)
  • 1 cup shredded sharp cheddar cheese (or a blend of your favorite cheeses)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp sour cream (or Greek yogurt for a lighter version)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste
  • 1 egg (to help bind the mixture)

Puff Pastry

  • 1 sheet puff pastry (store-bought, thawed)
  • 1 tbsp olive oil or melted butter (for brushing)


Instructions

  1. Prepare the Mashed Potatoes: If you’re using freshly made mashed potatoes, let them cool slightly. If using leftovers, make sure they are smooth and creamy. In a bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, garlic powder, onion powder, salt, pepper, and the egg. Mix until everything is fully incorporated.
  2. Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry to about 1/8-inch thickness. If it’s too sticky, use a bit of flour or parchment paper to help roll it out.
  3. Cut the Pastry: Using a round cookie cutter, cup, or the rim of a glass, cut the puff pastry into circles about 3 inches in diameter. You should get about 12–16 circles, depending on the size.
  4. Assemble the Bites: Place a heaping spoonful of the mashed potato mixture in the center of each puff pastry circle. Fold the edges of the pastry over the filling to create little pockets or pouches. Pinch the edges together to seal them. You can also fold the pastry over into a half-moon shape if you prefer.
  5. Brush with Olive Oil or Butter: Brush the tops of the puff pastries with olive oil or melted butter to help them turn golden brown and crispy as they bake.
  6. Bake: Place the filled puff pastries on a baking sheet lined with parchment paper. Bake in a preheated 375°F (190°C) oven for 18–20 minutes, or until golden brown and puffed.
