Description

A hearty and comforting breakfast recipe featuring fluffy biscuits topped with rich, spicy chorizo gravy made from scratch. Perfect for a satisfying morning meal that combines savory sausage, creamy gravy, and tender biscuits.

Ingredients

Scale

Biscuits

  • 8 biscuits (store-bought or homemade)

Chorizo Gravy

  • 12 oz Cacique Pork Chorizo (spicy flavor)
  • 1/2 medium onion (white or yellow), finely diced
  • 3 tablespoons all-purpose flour (can use gluten-free flour)
  • 2 1/2 cups whole milk (non-dairy milk optional)

Instructions

  1. Prepare the Biscuits: If using store-bought biscuits, bake them according to the package instructions until golden and fluffy. For homemade biscuits, roll out your dough and bake until they become golden brown and fluffy.
  2. Cook the Chorizo: Heat a large sauté pan over medium-high heat and add the chorizo. Break it apart with a spatula and cook for 5-7 minutes, stirring occasionally until fully browned and cooked through.
  3. Sauté the Onion: Add the finely diced onion to the pan with the chorizo and cook for about 7 minutes until the onion softens and becomes translucent.
  4. Add the Flour: Sprinkle the flour over the cooked chorizo and onion mixture. Stir well and cook for about 1 minute until the flour turns a light golden color, which helps to avoid a raw flour taste.
  5. Make the Gravy: Lower the heat to medium-low. Gradually pour in the milk while stirring continuously to prevent lumps. Let the mixture simmer for 5-7 minutes, stirring occasionally until the gravy thickens to a creamy consistency.
  6. Serve: Spoon the hot chorizo gravy generously over the warm biscuits. Add salt and pepper to taste, then serve immediately for a comforting breakfast experience.

Notes

  • For a gluten-free version, substitute all-purpose flour with gluten-free flour.
  • You can use non-dairy milk such as almond or oat milk as a dairy alternative.
  • Adjust the level of spiciness by choosing mild or spicy chorizo as per your preference.
  • Leftover gravy can be refrigerated for up to 3 days and reheated gently on the stovetop.
  • Serve with eggs or fresh fruit to make a complete breakfast plate.
