Instructions
- Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool for about 30 minutes. This step helps to dry out the rice slightly, preventing clumping and ensuring a better fried rice texture.
- Make the Bang Bang Sauce: In a small bowl, combine 1/4 cup mayonnaise and 2 tablespoons sweet chili sauce. Stir well until smooth. Add sriracha according to your preferred heat level and mix thoroughly.
- Sauté the Protein: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beef (or chosen protein) and cook until browned and cooked through, about 4-5 minutes. Remove the protein from the pan and set aside.
- Cook the Vegetables: Using the same pan, add another tablespoon of oil. Add peas, carrots, bell peppers, broccoli, snow peas, and corn (if using). Stir-fry for 3-4 minutes until vegetables are tender but still crisp.
