- 1 tsp garlic granules
- 90 g (1/2 cup) oat flour, plus extra for dusting
Instructions
- Mix Ingredients: Add the mashed sweet potato, mashed carrot, finely chopped rosemary, egg, Greek yogurt, garlic granules, oat flour, and olive oil into a large mixing bowl. Stir thoroughly until all ingredients are fully combined, forming a consistent batter.
- Prepare for Shaping: Sprinkle a little extra oat flour on a clean plate to prevent sticking. Using a tablespoon, scoop portions of the mixture and place on the floured plate to help shape the bites and keep them from sticking.
- Cook in Air Fryer: Preheat the air fryer to 180ºC (356ºF). Arrange the bites in a single layer inside the air fryer basket. Cook for 12 minutes or until the bites are golden brown and cooked through, soft on the inside, and slightly crispy outside. Alternatively, bake on a parchment-lined baking tray in a preheated oven at 180ºC for 20-25 minutes until golden.
- Serve: Transfer the sweet potato and carrot bites to a serving plate. Garnish with a sprinkle of fresh parsley and serve with your choice of sauce for dipping or accompaniment.
